Ingredients:

dry white beans

ground chicken

carton chicken broth

can chopped green chiles

olive oil

minced garlic

onion, chopped

salt and pepper

fresh spinach

 

Directions:

Soak beans overnight and cook according to package instructions, approximately 1 1/2 hours. Saute onions and garlic together, then add ground chicken and cook until chicken is no longer pink.  Add to beans, along with chicken broth, chiles, salt and pepper.  Cook an additional 30 minutes.  Add a couple of handfuls of fresh spinach at the end and mix in until spinach wilts a little.
