1 cup chickpea or garbanzo flour
1 cup water
1/2 tsp salt
minced garlic (optional)
dried herbs (optional)
10″ round baking pan or skillet
sauce and toppings of choice
Whisk together chickpea flour, water, salt and 3 tablespoons olive oil. You can also mix in garlic or dried herbs if you want additional flavors in your crust. Let sit for an hour. Set your oven to broil and preheat your pan. Remove pan, coat the bottom with 1 tablespoon olive oil, then spread in your socca batter. Return to oven and broil 3-5 minutes. You can add your sauce and toppings at this point. I sometimes like my toppings raw and other times, I’ll put the pizza back under the broiler. Remove and eat!
