baked mediterranean chicken


boneless chicken breasts

fresh rosemary

sundried tomatoes

onion, sliced

sliced black olives

brussels sprouts, halved

olive oil

2 lemons

minced garlic

salt and pepper



Spray the bottom of a 13 x 9″ baking dish with olive oil.  Put your fresh rosemary and sundried tomatoes in first, then top with chicken breasts.  Zest and juice your lemons and combine with 1/4 cup olive oil, garlic, salt and pepper.  Pour over chicken. Let marinate two or more hours. Add onions, olives and brussels sprouts to your baking dish.  Bake at 400F for approximately 50 minutes.
