quinoa tabbouleh salad

Ingredients:

1 cup quinoa

juice of one lemon

2 cloves minced garlic

1/2 cup extra virgin olive oil

large cucumber, diced

1 pint cherry tomatoes, halved

2/3 cup parsley, chopped

1/2 cup mint, chopped

small bunch spring onions, sliced

salt and pepper

 

Directions:

Prepare quinoa as directed on package.  Remove from heat and fluff with fork. Set aside.  Combine lemon juice, garlic, and olive oil.  Season with salt and pepper.   Add half to quinoa. Then add cucumber, tomatoes, parsley, mint, and spring onions. Mix.  Add remaining dressing.
